Tukenakuchen (Swiss Cookie Cake)
Imagine a delicious coffee cake flavored with cinnamon, not too sweet yet wonderfully satisfying, and you have Tukenakuchen. This is a recipe created by my great aunt, Aunt Susie, who was born in Basil, Switzerland. She taught me this recipe when I was very young, and it has been a family favorite ever since. I followed her around the kitchen, watching her measure out a handful of this, a pinch of that. Very old school. Tukenakuchen is wonderful with a cup of coffee or tea...and kids love it with a glass of milk. It is made with King Arthur unbleached flour, unsalted butter, granulated sugar, fresh eggs, and cinnamon. Tukenakuchen will stay fresh in an airtight container at room temperature for up to five days. It can also be frozen for later use.

Swiss Jam Cake (Raspberry, Strawberry, or Blackberry)
This cake is delicious for either breakfast or dessert. The recipe also comes from my Aunt Susie, who grew up in Basil, Switzerland. Think of it as a delicious butter cookie with a thick layer of raspberry jam in the middle. The dough is buttery and slightly sweet, and any variety of berry jam can be substituted. This cake keeps very well for one week in an airtight container at room temperature. It can also be frozen for later use.
