This cake is very moist, spicy, and absolutely delicious. The cake is made with King Arthur unbleached flour, grated organic carrots, chopped walnuts or pecans (optional), raisins, granulated sugar, canola oil, fresh eggs, pure vanilla extract, and cinnamon. The frosting is made with Philadelphia cream cheese, butter, confectioner’s sugar, and pure vanilla extract. It is best served fresh, but it lasts three days in an airtight container in the refrigerator.
