This is a true French classic. The crust is Pâte a Foncer Spéciale, made with King Arthur unbleached flour, unsalted butter, and fresh eggs. The filling is Crème d'Amandes (Almond Pastry Cream) made with unsalted butter, whole milk, vanilla bean, superfine sugar, fresh eggs, blanched almonds, and rum; and the almond cream is topped with ripe, organic Bartlett pears. After baking, the tart is painted with an apricot glaze to give it extra shine.
This tart keeps very well for five days in the refrigerator. It can also be frozen for later use.
